Seasonal Recipe: Creamy Avocado Soup

By now you have heard and read the incredible health benefits and uses of our favorite fruit -- yes, fruit -- the avocado! On toast, as a frozen treat, a smoothie thickener and mixer, it has a variety of yummy uses.

Nashville-based Chef and owner of The Chic Pea Catering Company, Kindy Girdley appreciates and shares our love of this one-of-a-kind fruit. She created this spicy and savory soup for our Womanista Easter Menu and we just know you will love it as much as we did!


  • 2 avocado, sliced
  • 1 cucumber, chopped
  • 1/2C cilantro, chopped
  • 2T scallion, chopped
  • 1 medium jalapeno
  • 1/4C fresh lime juice
  • 1/2C plain Greek yogurt
  • 2 cups vegetable stock

For Garnish

  • 4T bacon crumbles
  • 4T freshly cut sweet corn
  • 2T watermelon radish


Place avocado, cucumber, cilantro, scallion, jalapeno, lime juice, Greek yogurt and stock in a blender.  Season with sea salt and freshly ground pepper.  Chill in the refrigerator for at least 20 minutes.  Pour into individual bowls and garnish with any or all suggestions.
